Description
This Oude Pajotse Jenever is 100% malt wine. This means that no neutral grain alcohol was used, which was diluted with 10-15% malt wine. De Cort distills this jenever completely from the raw materials. Manu has gone back to the authentic recipe of 1/3 rye, 1/3 barley and 1/3 malted barley, which are ground on an old stone mill. The grains are combined with 7 carefully selected, local herbs including iris root and St. John’s wort. After distillation, De Cort matures the jenever in oak barrels. This is often a new barrel, but sometimes he also uses old bourbon barrels for this. This rich, full-bodied jenever acquires its beautiful golden yellow color as a result of barrel maturation.
