Geuzestekerij Odilon is located in the historic buildings of the Jouret brewery, situated in Bever, a charming village in the south of the Pajottenland.
The name Odilon refers to the last descendant of the Jouret family, who sold the brewery to the brothers Georges and Louis Félix Van Geersdaele in 1904. Six years later, the brewing activities moved to Pontembeek, after which the brewery building in Bever was transformed into a café with a venue place, known as the ‘Folies Bergère’. In 1942, a shop was opened that specialised in ‘colonial goods’.
111 years after the closure of the brewery activities, Thomas Singelé filled his first barrels with wort in the building. By mid-2024, the barrel arsenal already contained around 70 oak barrels, mainly from the Bordeaux region. The stock of lambic at that time was over 25,000 litres.
The first bottles of Odilon fruit lambic came onto the market in the autumn of 2024.
